Miyakojima Island Tofu "A type of Tofu made by using sea water"
Miyakojima, Okinawa Prefecture. In Okinawa, seawater has long been used in place of bittern as a coagulant in the process of making tofu. The minerals in the seawater add delicately sweet and salty notes to this uniquely textured island tofu. However, as the seas are getting increasingly polluted, this method of production is now limited to just a handful of places including Miyakojima. The taste imparted by this unique technique is something that our future generations will cherish.
